- Optimum – the temperature and pH that the enzyme works best at
- Denatured – when the temperature and pH changes to drastically that it alters the active site – the enzyme will no longer work.
- Active site – the area of the enzyme (sort of like the key) that ‘unlocks’ the substrate (lock)
